The most valuable, and at the same time extremely original coffee, which is the dream of every connoisseur – this is how only Kopi Luwak can describe. The unique Arabica is produced mainly in Indonesia – Sumatra, Java, Bali and Sulawesi. The qualities of coffee, however, are not related to the place of its origin but the unique method of processing. The taste and aroma of Kopi Luwak come from the predatory mammal of the Wyveridae family – the palm gourd. An essential element of the pet’s natural diet is the fruit it obtains, e.g. from coffee plantations. Łaskun draws nutrients only from the pulp and excretes undigested coffee beans. Indonesian farmers first used the grains extracted from the animal’s droppings in the 18th century. During the Dutch coloniser’s rule, they could not obtain fruit for their use directly from plantations. So they used grain gourmets found in the excrements to prepare the aromatic drink. In this way, they discovered the excellent taste of unusual coffee. Kopi Luwak quickly began to gain popularity among the Dutch. Due to the production limited to approximately 500 kg per year, it is one of the world’s most sought-after coffees.
In the case of Kopi Luwak, only palm trees are responsible for harvesting and processing them correctly. Thanks to the perfectly developed sense of smell, the pet searches for only the best, fully ripe coffee cherries. The entire processing of the fruit takes place in its digestive tract. Digestive enzymes break down the flesh and also affect the grain itself. As a result of their action, proteins break down, giving the coffee a bitter taste. Thanks to digestion and fermentation in the grace’s gastrointestinal tract, the caffeine content and the coffee’s acidity are also reducing. After about 1.5 days, the grains, still covered with pulp remnants, are excreted by the animal. Local farmers are responsible for finishing the work of grace. They find the grains with great care, then wash them and dry them in the sun.
